First, you’re gonna need some essentials: potato gnocchi, apples, broccoli, and a bunch of other goodies like EVOO (fancy talk for extra virgin olive oil), butter, cinnamon, and cheese. The usual suspects. Now, preheat that oven to 400 degrees and let's get this show on the road.

- Preheat your oven to 400
- In a bowl, toss the apple slices with EVOO, cinnamon, salt, and pepper.
- Spread the apples on a baking sheet lined with parchment paper.
- Toss the broccoli florets with the remaining olive oil, salt, pepper and add to the same baking sheet.
- Roast the apples and broccoli in the oven for 20-25 minutes, or until they are tender and slightly caramelized
- While the apples and broccoli are roasting, bring a large pot of salted water to a boil
- Add the gnocchi and cook according to the package instructions, usually until they float to the surface (about 2-3 minutes).
- Drain the gnocchi and set aside.
- In a large skillet, melt the butter over medium heat.
- Add the cooked gnocchi and sauté until they start to brown slightly, about 5-10 minutes.
- Add the roasted apples and broccoli to the skillet, gently tossing to combine. Then add chicken broth, mix well.
- Sprinkle the grated Parmesan cheese and dried basil over the gnocchi mixture.
- Garnish with fresh parsley.
