Gnocchi Gone Wild….with Roasted Apples, Broccoli & Cinnamon

Imagine sinking your teeth into a fluffy cloud of gnocchi, only to be pleasantly ambushed by the sweetness of caramelized apples and the savory crunch of roasted broccoli. It's like a flavor fiesta in your mouth, minus the annoying party cleanup.

First, you’re gonna need some essentials: potato gnocchi, apples, broccoli, and a bunch of other goodies like EVOO (fancy talk for extra virgin olive oil), butter, cinnamon, and cheese. The usual suspects. Now, preheat that oven to 400 degrees and let's get this show on the road.

Step numero uno: toss those apple slices in a bowl with EVOO, cinnamon, salt, and pepper. Spread them out on a baking sheet lined with parchment paper—because nobody’s got time for scrubbing sticky pans. Throw the broccoli florets in there too, with a little EVOO, salt, and pepper action. Roast them for 20-25 minutes until they’re tender and caramelized to perfection. While that’s happening, boil some salted water and cook the gnocchi until they float like little potato buoys. Drain them and set them aside.

Next up, melt some butter in a large skillet over medium heat. Toss in the gnocchi and sauté until they’re golden brown and slightly crispy. Now, this is where things get wild—add those roasted apples and broccoli to the skillet and give it all a gentle toss. Sprinkle on some grated Parmesan and dried basil, because why not? Finish off with a flourish of fresh chopped parsley. You’ve got yourself a dish that’s so good, even your most critical dinner guest will be speechless. Well, at least until they ask for seconds.
