Ricotta Breakfast Sausage Egg Bites

What’s the most addicting breakfast ever? This. This is. I love breakfast sausage so much, so you combine that with fluffy ricotta scrambled eggs and some red pepper flakes….and it’s guaranteed I’ll consume it all. The breakfast sausage makes a difference, so get one that’s semi-sweet with lots of flavor! My go-to has always been from @vtsalumi

  1. Cook sausage in a frying pan until browning and fully cooked. Layout on a paper towel to get excess grease off and set aside.
  2. In a small bowl, scramble up the eggs and ricotta cheese.
  3. Fill a non-stick muffin tin with sausage (about half way), then pour egg mixture over it. Be sure to leave some room at the top for eggs to rise. Sprinkle with salt, red pepper flakes and basil.
  4. Bake at 400 for 15-18 min, or until eggs are starting to brown lightly on top.
