Ingredients (Serves 2):

  • 2 sweet potatoes

  • ½ sweet yellow onion, chopped

  • 2 cups mushrooms, sliced

  • 3 cups fresh spinach

  • Juice of ½ lemon

  • ⅔ cup crumbled feta cheese

  • French fried onions (to taste)

  • 2 tbsp extra virgin olive oil (EVOO)

  • 1 tbsp butter (plus 1 tbsp for mashing)

  • 1 tbsp oregano

  • 1 tbsp garlic powder

  • Fresh thyme (to taste)

  • Balsamic glaze (optional)

How to Make It:

  1. Cook the Sweet Potatoes:

    • Oven: Preheat to 375°F. Pierce the potatoes with a knife, place on a baking sheet, and bake for 35-40 minutes until tender.

    • Microwave: Pierce with a knife and microwave for about 12 minutes, or until softened.

  2. Sauté the Filling:
    Heat EVOO and 1 tbsp butter in a large skillet over medium heat. Add onions, mushrooms, and lemon juice. Sauté for 3-4 minutes until softened.

  3. Add the Spinach:
    Stir in the spinach, garlic powder, oregano, salt, and pepper. Cook for another 2-3 minutes until the spinach wilts.

  4. Prepare the Potatoes:
    Cut the cooked sweet potatoes in half and scoop the insides into a bowl. Mash with 1 tbsp butter and a pinch of salt. Mix in the spinach and mushroom filling until fully combined.

  5. Stuff the Potatoes:
    Spoon the mixture back into the potato shells.

  6. Top and Broil:
    Sprinkle feta cheese and French fried onions over the stuffed potatoes. Broil for 3-4 minutes until the onions are crispy and the feta begins to brown. (Alternatively, microwave until heated through and toppings are melted.)

  7. Finish and Serve:
    Drizzle with balsamic glaze (optional) and garnish with fresh thyme. Serve immediately and enjoy!
