Apple & Brie Stuffed Chicken

Because nothing screams "Fall" quite like the concept of stuffing apples, syrup, and cheese into a chicken breast. Sure, you could just eat your apples like a normal person, or maybe put Brie on a cracker like everyone else, but where's the fun in that? Instead, let's just shove it all together, drizzle it in maple syrup, and call it a day. And yes, I'm using Brie, the creamiest, most delightfully snobby cheese out there, because I like to think my dinner should have a little bit of sophistication, even if it’s wrapped in poultry.

It’s ridiculously easy to make, and honestly, it’s probably better than your average weeknight chicken dish. So go ahead, follow along, and let’s see if this fancy chicken can upgrade your dinner game.

Here’s what you need:

  • 2 chicken breasts

  • 1 apple, thinly sliced

  • 4 slices Brie cheese

  • 1 tbsp minced garlic

  • 3/4 cup maple syrup

  • 1 tbsp Dijon mustard

  • Fresh thyme

  • Salt

How I made it:

  1. First, preheat your oven to 400°F. This is one of those rare times when setting your kitchen on fire isn't the goal.

  2. Next, slice the chicken breasts lengthwise, but don’t cut all the way through, just enough to make a little pocket for all the cheesy, apple-y goodness. Think of it like a secret snack compartment.

  3. Layer in about three apple slices per chicken breast. Enough to convince yourself this is healthy because: fruit.

  4. Now for the Brie. Slide a couple of slices in there, one on top of the apples, and one in the middle, because balance is key.

  5. Close the chicken up like it’s full of secrets, and place it in a cast iron pan. If you don’t have a cast iron pan, just act like you do, no one will know.

  6. In a small bowl, mix the maple syrup, Dijon mustard, and garlic. It’s your chance to play chef, so throw in some extra garlic just because you can.

  7. Sprinkle the chicken with salt like you’re on a cooking show, then pour the syrup mixture all over it, letting it ooze into every crevice of the apples and Brie. It’s called flavor layering, obviously. Throw some fresh thyme on there as well.

  8. Don’t forget to save some of that maple syrup mixture for later, you’re going to want to drizzle it on top when you serve it because excess is our middle name.

  9. Bake for 25 minutes, or until the chicken is cooked through and oozing with cheesy, apple-y goodness. For a final touch of crispy perfection, broil it for an additional 3-4 minutes.

  10. Remove it from the oven, admire your work, and drizzle on more of that syrup mixture because, it’s the best part. Garnish with thyme, take a picture for Instagram, and enjoy. Or, you know, just eat it straight from the pan like I do.

  2. Slice the chicken breasts lengthwise, leaving about half an inch uncut to create a pocket.
  3. Layer 3 thin apple slices inside each pocket.
  4. Add Brie slices—one on top of the apples and one in the middle.
  5. Close the chicken and place it in a cast iron pan.
  6. Mix maple syrup, Dijon mustard, and minced garlic in a small bowl. Adjust seasoning to taste.
  7. Sprinkle salt on the chicken, drizzle with the maple syrup mixture, letting it flow over the apples and cheese. Add fresh thyme.
  8. Reserve some of the syrup mixture for serving.
  9. Bake for 25 minutes or until the chicken is fully cooked. Broil for 3–4 minutes to crisp the top.
  10. Remove from the oven, drizzle with more syrup mixture, garnish with thyme, and enjoy!
