Apple & Brie Stuffed Chicken
Because nothing screams "Fall" quite like the concept of stuffing apples, syrup, and cheese into a chicken breast. Sure, you could just eat your apples like a normal person, or maybe put Brie on a cracker like everyone else, but where's the fun in that? Instead, let's just shove it all together, drizzle it in maple syrup, and call it a day. 2 chicken breasts
1 apple, thinly sliced

How I made it:
First, preheat your oven to 400°F. This is one of those rare times when setting your kitchen on fire isn't the goal.
Next, slice the chicken breasts lengthwise, but don’t cut all the way through, just enough to make a little pocket for all the cheesy, apple-y goodness. Think of it like a secret snack compartment.
Layer in about three apple slices per chicken breast. Enough to convince yourself this is healthy because: fruit.
Now for the Brie. Slide a couple of slices in there, one on top of the apples, and one in the middle, because balance is key.
Close the chicken up like it’s full of secrets, and place it in a cast iron pan. If you don’t have a cast iron pan, just act like you do, no one will know.
In a small bowl, mix the maple syrup, Dijon mustard, and garlic. It’s your chance to play chef, so throw in some extra garlic just because you can.
Sprinkle the chicken with salt like you’re on a cooking show, then pour the syrup mixture all over it, letting it ooze into every crevice of the apples and Brie. It’s called flavor layering, obviously. Throw some fresh thyme on there as well.
Don’t forget to save some of that maple syrup mixture for later, you’re going to want to drizzle it on top when you serve it because excess is our middle name.
Bake for 25 minutes, or until the chicken is cooked through and oozing with cheesy, apple-y goodness. For a final touch of crispy perfection, broil it for an additional 3-4 minutes.
