  1. Heat a skillet over medium heat and cook chopped sausage with a little butter until browned. Drizzle with maple syrup, sprinkle with 1/2 tbsp fresh thyme, and stir to combine.
  2. Add chopped peppers and another slice of butter to the skillet. Cook for 2-3 minutes on medium heat, then turn off heat and set aside.
  3. Heat a non-stick pan over medium-high. Pour scrambled eggs into the pan and gently push edges toward the center as they cook. Continue until eggs are mostly set but slightly soft in the center.
  4. Spoon sausage and pepper mixture onto one side of the eggs. Sprinkle mozzarella and garlic salt over the filling. Fold the other side of the omelette over the filling, leaving some visible.
