Ground Turkey Stuffed Sweet Potatoes

  1. - Bake sweet potato for 30 min at 400 or you can microwave for 6-7, until potato has softened. Set aside to cool down a bit. Cut the potato in half. Using a spoon, carve out the inside and place it into a bowl. Mash together with a fork and add a little butter, salt & pepper. Set aside.
  2. - In a large skillet, drizzle olive oil, and a tbsp of butter and cook ground turkey on high with a little salt, pepper, and garlic powder.
  3. - Once the turkey is cooked, add a decent amount of Worcestershire sauce all over and mix.
  4. - Set ground turkey aside once fully cooked
  5. - Add chopped onions with another tbsp of butter to the skillet and sauté for about 2-3 minutes until softened.
  6. - Add spinach and mix well. Drizzle a little evoo all over if it’s too dry.
  7. - Transfer the ground turkey back to the skillet and stir ingredients together.
  8. - Sprinkle in paprika, oregano, basil, garlic salt, 1/3 cup of Parmesan, mix and let it sit on simmer for 3 min.
  9. - Preheat oven to 420
  10. - Add a little of the mashed potato mixture to the bottom of each potato.
  11. - Add a large layer of the ground turkey and spinach mixture on top.
  12. - Sprinkle with shredded cheddar cheese and garlic salt.
  13. - Baked for about 8-10 min.
  14. - Remove from oven, add fresh chives on the top and sour cream!
