Not Your Average Ravioli

“Not Your Average Ravioli: The Cheesy, Leafy, Tomato-y Concoction You Didn't Ask For.” Why should you make this dish, you ask? Well, let’s just say your taste buds are probably begging for a vacation from the same old boring meals. This recipe is like that unexpected road trip you didn’t plan but somehow end up enjoying. It’s the perfect meal to make when you want to impress absolutely no one, yet still give yourself a pat on the back. So, here’s how to make a dish that’s just good enough to contemplate making again—maybe.

You’ll need cheese ravioli, a can of diced tomatoes (you know, the ones that have been languishing in your pantry since forever), a mountain of fresh spinach (like we're Popeye or something), and an obscene amount of shredded mozzarella. Also, grab some chicken broth, grated Parmesan, panko bread crumbs, and enough garlic powder and garlic salt to ward off a vampire apocalypse. Don’t forget the dried oregano and basil, and of course, the obligatory salt and pepper. And because we’re fancy like that, a little EVOO (Extra Virgin Olive Oil for the uninitiated).

Okay, let’s get to it. Preheat your oven to 400 degrees because we’re civilized people who use hot ovens. In a large casserole dish, drizzle some EVOO like you’re painting a masterpiece. Lay down a bed of fresh spinach and sprinkle it with garlic powder, oregano, basil, and salt. Next, dump that can of diced tomatoes over the spinach—no need to be delicate. Top with a generous layer of shredded mozzarella and pour in 1/4 cup of chicken broth. Place individual cheese raviolis on top, drizzle with more EVOO, and sprinkle 1/2 cup of grated Parmesan over the ravioli. Add another dose of garlic powder and a pinch of salt because, why not? Pour another 1/2 cup of chicken broth in there for good measure. Top it all off with panko bread crumbs, more oregano, and a sprinkle of garlic salt.

Now, slide this masterpiece into the oven and bake for 20 minutes. After that, switch to broil for 3-4 minutes to get that crispy, golden top that makes you look like you know what you’re doing. And there you have it! A cheesy, leafy, tomato-y concoction that says, “Sure, this works.” Enjoy your creation and remember, it’s just good enough to make again—maybe.
