  1. Preheat your oven to 400.
  2. Slice the potato into pieces (about 1 inch thick). Add salt to both sides and place on a baking sheet with tin foil and non-stick spray.
  3. Bake for about 25-30 minutes. Remove from the oven, and immediately, using a fork start to press down (not too hard) on the potatoes, smashing them down flat. It’s easier if you place the fork in the center and then push down from there to prevent the sides from breaking or splitting too much.
  4. Once you’ve smashed them down enough to your preference, add butter to the top of each, with garlic power, a little more salt, parmesan cheese and fresh thyme.
  5. Place them back in the oven, and broil them for 5 minutes. Remove them and eat as is, or add a drizzle of honey if you want to get extra fancy! Enjoy.
