Slow Cooker Chicken, White Bean & Spinach Soup
Oh, so you've decided to embrace the slow cooker lifestyle, have you? Welcome to the club of "set it and forget it" cooking, where the magic happens while you binge-watch your favorite series or, you know, pretend to work from home. Today, I'm going to share with you the secret to making the kind of Slow Cooker Chicken, White Bean & Spinach Soup that'll make you wish you had a bigger slow cooker. Why? Because you'll be eating this for days and loving every slurpy, comforting spoonful of it.
First off, gather your ingredients. You'll need 2 chicken breasts (because one is never enough), a can of Cannellini beans (fancy, right?), enough fresh spinach to make Popeye jealous, some carrots, chicken broth, a yellow onion, and a smattering of spices that'll make your taste buds sing. Oh, and don't forget the lemon. It's not just for garnish; it's a game-changer. Now, if you're like me and measuring is not your forte, just remember: a handful of this, a sprinkle of that, and a generous drizzle of olive oil because, let's face it, everything's better with olive oil.
Now, let's get down to business. Chop those veggies like you're on a cooking show and toss them into the slow cooker with the grace of a seasoned chef. Add the beans and spinach, then give everything a good mix. This is your moment to shine and pretend you know what you're doing. Cut that lemon, place it strategically around the pot like it's part of a ritual, and nestle those chicken breasts in there like they're tucking into bed. Now drown it all in chicken broth and sprinkle your spices like you're a magician casting a delicious spell. The final touch? A drizzle of olive oil and a few pats of butter because, why not?
Set your slow cooker on high and let it do its thing for about 3-4 hours. That's your cue to go live your life, or at least find a good show to watch. When it's done, get ready to play the part of the hero as you shred that chicken, stir in some parmesan cheese, and adjust the seasoning like you were born for this. Taste test, adjust, and then pat yourself on the back because you, my friend, have just made a soup that's not only light and tasty but also ridiculously easy to make. And the best part? You'll be enjoying the fruits of your minimal labor for days to come. Cheers to that!
