Pizza Tortellini

Okay, hold up. Before you start judging me for my culinary choices, let me introduce you to something that might just blow your pizza-loving mind: Pizza Tortellini. Yeah, you heard me. It's like your regular pizza went on a fancy date with tortellini and they had the most beautiful baby. Now, I know what you're thinking, "Pizza is sacred, how dare you?" But hear me out, I'm Italian. I've got pizza sauce running through my veins and pasta as my middle name. So, when I tell you this is the bomb, you better believe it.

This dish is the superhero team-up we didn't know we needed. It's got all the makings of a fantastic pizza – pepperoni, mozzarella, the works – but then it pulls a fast one on you and shows up in tortellini form. And the best part? It's ridiculously easy to make. I mean, who has time to knead pizza dough and make pasta from scratch on a Tuesday night? Not me, that's for sure. This recipe is all about maximum flavor with minimum effort. Just a few ingredients that you probably already have lying around, and boom, you're halfway to flavor town.

So, here's how you whip up this culinary masterpiece: Boil some cheesy tortellini, throw it in a dish, and then just start piling on the good stuff. Tomatoes, butter, all the spices that make life worth living, and of course, pepperoni and mozzarella. Give it a little olive oil drizzle because we're fancy like that, add some heat with red pepper flakes, and pop it in the oven. Once it's bubbling and the cheese is doing that perfect golden-brown dance, you're ready to dive in. Just let it cool for a sec, though, because tortellini burns are no joke. And there you have it, pizza tortellini – because why choose between pizza and pasta when you can have both?

Pizza Tortellini

I honestly am not sure if I like this or pizza better (don’t you dare roll your eyes or gasp at me if you haven’t tried this yet). I come from an Italian family, so trust me, my passion is pizza, pasta and all the things. This is best of both worlds…your pizza, your pasta…all that’s missing is cheesy garlic bread to dip with. The only way to describe this is: it tastes like amazing delicious pizza, but it’s not, it’s amazing delicious tortellini. Also - it’s SO easy. I didn’t get all fancy with this, in fact, complete opposite. Some of my favorite meals are the ones that have just a few ingredients that most would already have in their kitchen! Enjoy!

Ingredients

Instructions

  1. - boil tortellini for about five minutes
  2. - drain pasta and pour into baking dish
  3. - open the can of tomatoes, add small pieces of tomatoes all over the pasta (I manually just break little parts off). Do this until all tomatoes are gone. You can also just use fresh tomatoes, but I surprisingly didn’t have any and this worked completely fine, plus I poured a little of the tomato juice from the can over the pasta)
  4. - Add two tablespoons of butter on top (one on each end of dish)
  5. - Sprinkle all over: oregano, basil, garlic powder, garlic salt
  6. - Add thinly sliced pepperoni
  7. - Add chunks of mozzarella, and a few more pepperoni on top the cheese.
  8. - Drizzle entire dish with a little olive oil, add red pepper flakes and fresh basil.
  9. - Bake at 400 for about 15 min (or until bubbling and cheese is browning), I usually switch to broil the last 2 min.
  10. - Let it sit and cool for 10 min. Enjoy!
