So, you've been living a safe life, sprinkling a little black pepper on your eggs and calling it a day, huh? Well, it's time to put on your big kid aprons and dive headfirst into something that's got a bit more kick to it. And by 'a bit,' I mean enough to make you question all your life choices up until this point. But fear not, for the faint of heart, there's always the 'mild' route – though, let's be honest, where's the fun in that?
Here’s what I threw together; round turkey because we're healthy (sort of), a generous dollop of hot salsa (or not, depending on your spice tolerance, you wimps), cottage cheese – yes, you read that right – and a bunch of other stuff like spinach, onion, and a concoction of spices that'll make you feel like you're at a party hosted by your taste buds. Cooked the turkey with some flair (and EVOO), threw in the onions and spices until they knew who's boss, and then added the salsa and spinach, because we're all about that veggie life. Slapped in the cottage cheese, which, by the way, melts into this creamy, dreamy sauce that'll make you want to write poetry about it. Let it all simmer into a pot of "Oh my gosh, what is this magic?" Served it over rice because we're fancy, but let's be real, I ate most of it straight from the pan.

- First, cook the ground turkey in a large skillet with some EVOO. Sprinkle in a little salt & pepper while it’s cooking.
- Add chopped onion, garlic powder, oregano and basil. Let this cook for another 3-5 min.
- Add hot salsa, butter, spinach. Stir and cook until spinach is wilted.
- Add cottage cheese, garlic salt and Worcestershire sauce and plenty of crushed red pepper. Mix everything together until cottage cheese is partially dissolved and makes a creamier sauce.
- Let this sit on low, taste test and add additional seasonings if needed. I like to let it thicken and sit for at least 5 additional minutes to really give it the most flavor.
- Add grated Parmesan all over the top.
- Serve over rice or eat as is.
