Let's be real, the only way they're making it onto my plate is if they're smothered, covered, or transformed into something that barely whispers their original name. Enter my latest culinary obsession: Sweet Buttery Glazed Carrots. This dish is the Clark Kent of the vegetable world—mild-mannered and unassuming until it hits the oven and becomes a superhero of flavor.

Now, you might be thinking, "But carrots? Really?" Trust me, I was on the same page, firmly in the camp of "if it's not dipped in blue cheese or drowning in garlic and Parmesan, why bother?" But this dish, my friends, is the exception. It's like someone took the essence of holiday joy, distilled it into a syrupy, buttery, sweet-and-salty glaze, and then decided, "You know what this needs? Carrots." The result? A side dish so good, it almost steals the spotlight from the main course. Almost.

The process is simpler than convincing yourself that starting a diet "tomorrow" is a good idea. Lay those carrots out like they're sunbathing on a baking sheet, drench them in melted butter (because everything is better with butter), and give them a good sprinkle of brown sugar and salt. A drizzle of honey for that sticky sweetness, and into the oven they go. Twenty minutes at 400 degrees, and voilà, you've got yourself a dish that'll make you forget every bad thing you've ever said about carrots. Garnish with parsley, add a little more honey if you're feeling extra, and serve it up. And if by some miracle you're not convinced, swap in my second-favorite combo of butter, minced garlic, garlic salt, and Parmesan. Because, let's face it, garlic and cheese make everything better.

The only way I enjoy carrots, is either dipped in a mound of blue cheese dressing, or cooked with butter, garlic and Parmesan cheese, or….this heavenly sweet dish. Super simple, and takes about 20 min. Perfect as a holiday side dish, or any side to protein like steak, chicken, etc.I like mine soft but not mushy, a little sweet but also salty.   1. Lay the carrots across a baking sheet, and pour melted butter over all of it, turning the carrots to get all sides.
  2. Sprinkle brown sugar and salt on top (all sides).
  3. Drizzle a little honey across and bake for 20 min at 400 degrees.
  4. Pull out of oven, garnish with parsley and a little more honey and serve. Enjoy!
