- First, start with the rice. Add chicken broth and water to a medium-sized pot, bring to a boil. Then add the rice, cover and turn heat down to low.
- While that’s cooking, chop the chicken into bite-sized chunks. Add to a frying pan with some evoo, sprinkle in some garlic salt and pepper. Cook chicken on high for 5 min (until fully cooked). Add the peanut sauce and stir together. Let it sit on low heat.
- When the rice is done, add it to the frying pan, mix it all together. The sauce will thicken, so if you want to add more, go for it! Sprinkle on some red pepper flakes, a little more garlic salt and parsley. Enjoy!
